Build quality is fantastic. I put it through its paces last week with a slow and low smoked plate ribs, smoked almonds, reverse seared tritip and corn on the cob- with temps ranging from 225 to 550 - all in one session! The product is very simple and is fine. However, the actual purchase I thought I was receiving was misrepresented on the Wayfair site so although the individual product is great, I expected accessories that were not and cannot be included. Came out crispy yet tender. The kamado + dojoe gave me the closest result to date, highly recommend. Just a small design miss: I wish there was a way to close the airflow when I'm done cooking to preserve the remaining charcoal for the next run, but otherwise it's perfect. Philly. I bought this because I used to use a pink salt block years ago and wanted something that would work as well. The thing to remember is to get it up to temp for a good while so it’s heat soaked.
